Launching on 17th March and running through November 2026, the seasonal collaboration with St-Germain Elderflower Liqueur captures the romance of spring in full bloom. Served 35 floors above the city at TĪNG, the experience pairs delicate pâtisserie and refined savouries with vibrant elderflower cocktails, designed for lingering conversations and unhurried indulgence high above London’s skyline.
Elderflower has enjoyed a remarkable modern resurgence in Britain over the past decade, propelled back into the spotlight after the lemon and elderflower wedding cake served at the 2011 wedding of Prince William and Catherine Middleton captured the nation’s imagination - transforming a traditional countryside flavour into one of the defining tastes of contemporary British spring and summer entertaining.

As the city emerges into spring, the menu reflects the freshness of the season - floral notes, bright citrus, ripe berries and soft herbal accents woven throughout each creation. It is an invitation to pause, raise a glass, and savour long afternoons that effortlessly drift into early evening.
Curated by Executive Pastry Chef Piero Sottile and his talented team, the afternoon tea balances British tradition with contemporary flair.

- St-Germain Sunset Pavlova - An airy pavlova infused with St-Germain, paired with mango and passionfruit for a luminous, sun-kissed finish.
- Pistachio Éclair - Caramelised pistachios and velvety pistachio cream in delicate choux pastry.
- Strawberry Meadow - Strawberry and basil cheesecake, capturing the freshness and fragrance of spring gardens.
Savoury Selection
- Smoked Beef & Goat’s Cheese Quiche - Elevated with St-Germain and white balsamic vinaigrette.
- Beetroot Muffin - Whipped feta cheese adding a vibrant, earthy balance.
- A refined selection of finger sandwiches including coronation chicken, smoked salmon with dill crème fraîche and lime zest, roasted dry-aged beef with horseradish and watercress, and truffle egg and cress.
Freshly baked plain and raisin scones are served warm with strawberry jam and clotted cream, accompanied by Shangri-La’s extensive tea collection spanning black, green, white and oolong varieties.
